FAMILY MEAL: IPAPA, ILAYISI NENYAMA / PAP, RYS & VLEIS

Guests were welcomed with Spier Wine Farm Signature MCC 2023 before moving through a series of immersive rooms designed to honour three humble ingredients: pap, rice and meat.
A pause and cleanse initiated the evening — a sensory palate cleanser inviting guests to reset from visual, auditory and emotional noise. To imagine, you must first erase.
The journey unfolded through:
– The Bread & Tallow Room, where beef tallow candles melted into corn bread.
– The Rice Memory Room, centred around breyani, spice packs to recreate it at home, and a magnifying glass revealing each guest’s name on a single grain of rice.
– Ushatini (smoor jellies) served with pap waffles.
– A tablecloth zine published especially for the dinner.
– A corn-themed fortune teller game.
Dishes included tuna crudo with candied beef tongue — an ode to Ryan Cole — pap/vleis, and vegetable breyani, paired with Spier Wine Farm Seaward Shiraz 2023.
The evening closed at the candy bar: bananas, eggs, blue sherbet and cigarettes — nostalgic, playful, slightly subversive.
