Crispy pork burger with sticky bacon-wrapped cherries (oopsies) and the Spotify Secret Mix Sauce

Makes 4

INGREDIENTS

500 g pork bangers

½ cup cake flour

3 eggs, beaten

1 cup panko crumbs

Sunflower oil for deep frying

6 rashers of bacon

12 red glazed cherries

Spotify Secret Mix Sauce

4 burger buns

Methods

For the burger patties:
  • Squeeze out the mince from the casings of the pork rashers.
  • Divide the mixture into equal portions and shape them into patties – the meat of two pork bangers (about 120 g) makes one patty.
  • Chill in the fridge.
For the oopsies:
  • Pre-heat the oven to 200 °C.
  • Cut the bacon rashers in half and wrap around each of the glazed cherries, and secure with a toothpick.
  • Bake the cherries in the oven for 10 minutes until sticky and crispy.
For burger assembly:
  • Heat the oil in a medium pot to a medium high heat.
  • Crumb the patty in flour, egg, then in panko crumbs.
  • Deep fry the crumbed patties for 8 – 10 minutes until cooked through and crispy.
  • Toast the burger bun in a pan and generously spread a layer of Spotify Secret Mix Sauce onto it.
  • Place a patty on the bun and top with more sauce, add two oopsies (toothpicks removed) and close the burger.
  • Finish the burger with the third oopsie by securing it on top with a toothpick and serve.

*We can't share the Secret Spotify Mix Sauce recipe, but if you blend ½ cup of mayo with 2 T's of chakalaka, you will get pretty close ;)
