CHAKALAKA

Makes: 4 - 6 jars

INGREDIENTS

  • 20 ml oil
  • 100 g onion, julienned
  • 500 g carrots, grated
  • 150 g red and yellow peppers, diced
  • 50 g garlic, chopped
  • 2 cans baked beans
  • 2 T curry powder
  • 50 g tomato paste
  • 1 1⁄2 T BBQ spice
  • 20 ml oil

METHOD

  • Add oil to the saucepan on medium heat and sauté onions until golden brown.
  • Add the curry powder and BBQ spice, carrots and garlic and cook for 4 minutes.
  • Add the diced peppers, cook for 2 minutes, then add tomato paste and baked beans and simmer for another5 minutes.
  • Taste for seasoning and adjust to liking.
  • Ready to serve hot or cold.
