Studio H was commissioned by Defined PR to present a fragrance masterclass and installation for the launch of Comfort’s new fragrance collection in Johannesburg. Hannerie presented an interactive sensory workshop exploring the intricate connection between scent and memory, demonstrating through engaging sound, smell and taste exercises how the olfactory system works directly with the brain’s emotional and memory centres. Unlike other senses, the olfactory system processes directly to the brain areas associated with emotion and memory. This explains why smells can trigger vivid and emotional memories, and also significantly impact our perception of flavour.
Guests were also encouraged to interact with a variety of fragrance samples and share personal stories or memories linked to specific smells. This hands-on experience emphasised the remarkable power of scent to create emotional connections and enhance sensory experiences, fostering a deeper understanding of the role fragrance plays in shaping brand identity.

Hannerie was the inaugural lead curator and designer of this purpose-driven space that supports job creation and skills development, a space that champions small businesses and facilitates skills-sharing between credible food experts and budding entrepreneurs. Studio H is still part of the mentorship programme for tenants at Makers Landing, whereby our studio assists food entrepreneurs to scale their businesses.

Conceptualise a dinner for the MasterChef South Africa sponsons and guests for Earth Hour 2021.
Amidst accelerating climate change and staggering biodiversity loss, Earth Hour continues to inspire millions of people to take action for our planet and nature. Every year, at 20:30 on the last Saturday of March, supporters in over 190 countries and territories unite, taking action on and raising awareness of the issues facing our one home.
With MasterChef South Africa’s commitment to sustainability and the environment, it was only apt to host the official sponsor’s dinner on Earth Hour 2022. This dinner was attended by 80 of the main sponsors, associated sponsors, contestants and judges, DStv Rewards Winners, production agency and members of the media. The dinner was prepared by Chefs Mmabatho Molefe and Bertus Basson, and the canapés were served on ‘Shellegance’ by local artist Lucie De Moyencourt.

Curate a menu and produce the early access VIP dinner for the Air Jordan 1 '85 OG
Inspired by Michael Jordan’s favourite foods, the menu paid homage to his legacy while creating a memorable dining experience for 23 VIP guests – his iconic jersey number. The first course featured a “Bred Basket” with local flair, including freshly grilled roosterkoek and black sesame-infused bread, served with biltong butter and smoortjie. The main course was flame-grilled ribeye with classic sharing sides – Caesar salad, garlic-infused creamed spinach, and grilled pumpkin pie with maple glaze. (Each ribeye was seared with the Jumpman logo, adding a bold tribute to the sneaker legend.) Dessert paid tribute to comfort food with an ice cream cookie sandwich.

We threw a giant sandwich party on the last Sunday in March with our friends The Maak, Picnic (Faith Shields) and The Lookbook. The activation was the grand finale of The Bree Street Picnic Blanket.
Over a period of two months, public volunteers have helped The MAAK x Picnic sew community-scale picnic blankets, which were rolled out for a day of food, music, and playful public interventions. Anyone could join and volunteers assisted us to make coleslaw that would become the filling for our 20-metre sandwich. The coleslaw ingredients were all combined in a huge tarp by volunteers shaking and raking the salad! View the making of the slaw here.
The Bree Street Picnic Blanket is part of an ongoing research and public art project that explores collective-making as a tool to grow community and activate public space. Sewn together with volunteers, bespoke blankets are used as soft public infrastructure to prompt questions about how to make cities more human-centered, welcoming, comfortable and fun.
This project was part of Young Urbanists’ car-free street experiment. 🦓🛣️

THE BRIEF
Design a brunch-for-besties on the day after Women’s Day to celebrate the launch of the Shelflife x Selfi capsule collection. The 15-piece range blends Shelflife’s streetwear DNA with SELFI’s conscious craftsmanship – inspired by the quiet power of your ride-or-die. In soft tones of sky blue, chocolate brown and cream, each piece invites you to see yourself through chosen family: with love, honesty, and unapologetic self-expression.
THE CONCEPT
Together with Amy-Jo Windt of Grey Bird Desserts, we designed an interactive brunch that brought best friends closer. Design touches set the stage for connection: a chequerboard tablecloth, paper fortune tellers and playful tablescape. Each pair of besties received a surprise dessert: mini cakes for two, each one different, revealed through a game of flavour-guessing using the paper fortune tellers. Chouxettes arrived with mini piping bags to fill together.
The centrepiecewas an X-shaped, two-tier cake that mirrored the collaboration itself. When it came time for mains, the cake was pulled apart into four sections with guests drawing the tablecloths to the centre of the tables – a shared act of breaking, making, and feasting.

Narrative PR
Design a menu for the opening of Belgian artist Koen Vanmechelen’s Cosmopolitan Renaissance exhibition in Cape Town.
Central to the artist’s work is the concept of bio-cultural diversity, which he investigates through exploring the themes of interconnectedness, and sustainability. The menu, inspired by the Five Kingdoms of Nature:
Animals: Red centre devilled eggs
Plants: Asparagus and edible flower skewers
Fungi: Grilled mushroom skewers
Protists: Kelp, rice paper puffs and kelp-cured fish
Monera: Mold-ripened cheese with shaped jelly on handmade crackers

Dutch Design Week
We used residue water from fermented foods from around the world as perfumes, accompanied by printer-generated food insults to encapsulate the concept that, at the core, we all eat the same.
Residue waters from traditional fermented dishes, that are deemed worthless, were packaged as a range of high-end perfumes. They highlight how valuable the microbes in foods are to the human body. This range of anti-perfumes, representing countries from around the world, was accompanied by a food insults* printer to draw attention to the fact that often, horribly, cultures are ridiculed for their most precious and proudest national dishes. This interactive installation, where visitors are encouraged to smell and taste the anti-perfumes, serves as a reminder that we all eat the same.
All the insults were gathered from actual Youtube footage.


Clockwork Media, for Disney+
For the launch of season 3, create an opportunity for the world of The Bear to come to life through an immersive activation that captures the essence of the show’s themes.
A three-day fine dining pop-up restaurant where guests were immersed in the world of The Bear. The exterior mimicked the original sandwich shop in downtown Chicago (with arcade machines, a yellow cab, smoking grate and all), while the interior transported guests to Carmy's dream restaurant as featured in season 3. The menu, designed and executed by Michelin-trained chef Gregory Czarnecki, was carefully crafted to reflect the show's core themes.

V&A Waterfront, Makers Landing
Create an activation for the opening of Makers Landing.
100 Flavours was an interpretation of a what a South African Food Museum could look like. The 100 Flavours exhibition, that ran for six months at Makers Landing in the V&A Waterfront, educated and inspired visitors with a gastronomic journey through South Africa’s iconic ingredients, recipes, cooking methods and culinary tools. Visitors could discover South Africa's edible past amid archaeological evidence of the earliest cooking over fire at Gauteng’s Cradle of Humankind; savour the first feasts with prehistoric Cape West Coast shellfish midden mounds; admire the creativity of the ancient honey hunters depicted in KZN’s San rock art and then marvel in a past-meets-present epicurean experience with a wild flower honey tasting. All the while walking amongst the foundations of the pre-colonial Khoi Camissa trading station.

THE BRIEF
To create a lunch set within a working cherry orchard on the farm, an experience rooted in place, season, and simplicity.
THE RESULT
Set deep in the cherry orchards of Ceres, the table was designed as an extension of the landscape – unfussy, generous, and anchored in fire cooking. In collaboration with Juwan Beyers Food Design and Chef Strone Henry, we developed a menu that celebrated the cherry, woven through each course.
The result was a farm-style lunch that balanced sweetness, acidity, and smoke, celebrating the cherry in its many forms, from fresh and bright to slow-cooked and richly reduced.

Laphroaig Taste Trailblazer
Create a brand masterclass for a campaign that aims to create affinity with new whisky drinkers.
A masterclass, immersive sensorial installation and lunch that introduces the brand through tales of peat, salt and fire. Guests interact with a library of sensorial elements that link to the flavour pillars of the whisky, followed by an interactive brand presentation and fire-cooked lunch menu and whisky tasting.

By far one of our favourite toys, we use our 3D food printer to create future food menus for clients for a range of activations from intimate dinners to large-scale expos and banquets. Our 3D food printer, the only of its kind in Africa, is a great way to amplify a future-forward strategy.
In the near future, 3D food printing could allow consumers to print food with customised nutritional content, tailored specifically to their individual dietary needs. So, instead of eating something mass-produced, a person could soon consume something designed for their particular needs and tastes, on demand.
Imagine the next ‘ready-to-eat’ meals as cartridges of food printed into shapes determined by downloadable designs.

FOOD XX Awards 2024
Recognising 19 Women Transforming South Africa’s Food Scene
A group of 19 women from across South Africa have been honoured for their outstanding contributions to the food and hospitality industry.
The winners of the 2024 FOOD XX Awards have been revealed, with 19 pioneers honoured at a special ceremony held at Soetmelksvlei, Babylonstoren, on Wednesday, 28 August. Launched by Studio H in 2019, the biennial awards celebrate the remarkable contributions of women across the food and hospitality industry, recognising excellence in everything from farming and food styling to education, culinary heritage, and beyond.
“We were once again overwhelmed by the incredible volume of nominations," says Hannerie Visser, director and founder of Studio H. "This only strengthens our conviction that women truly are the backbone of the food and hospitality industry. Now, more than ever, it’s crucial that we take the time to celebrate and honour their remarkable contributions.”
The winners were those who received the most votes from a pool of over 500 candidates. Nominations were open to the public during the months of July and August, with the judging performed by an independent panel comprising winners from the year prior – as is customary at the FOOD XX Awards. This year’s panel consisted, amongst others, of Dr Anna Trapido, Zandile Finxa, Khanya Mzongwana and Errieda du Toit.
“We are thrilled to shine a light on the extraordinary women shaping the future of our industry,” says Visser. “The FOOD XX Awards are more than just a celebration of their achievements; they are a platform for amplifying their voices and fostering a community where women can inspire, uplift, and support one another across every aspect of food and hospitality.”

THE CLIENT
Scape 100
THE BRIEF
Scape 100 called for a menu that honoured the moment – a celebration of industry leaders whose work has shaped the field. Set within an art gallery with an existing exhibition, the context invited something with a lighter, more playful hand.
CONCEPT
Grounded in the significance of the occasion, yet responsive to the spatial language of the gallery, the experience was designed to feel both elevated and unexpected.
EXPERIENCE
The result was a series of interactive and memorable food moments: a caviar and hot dog trolley, oversized sourdough crisps broken by hand with hammers and paired with Klein River Gruberg and a slice-it-yourself salami station that quickly became a guest favourite.
Further elements included a participatory cake, a melon and salt table and custom-flavoured salts for popcorn – pickle, banoffee, and biltong. The experience was rounded out with jelly shots and sherbet & lollipops, adding a nostalgic, playful layer.
APPROACH
This is how we practise food design: considering not only what is served, but why it exists in that moment. Each element responds to the people, the place, and the purpose, creating an experience where food becomes part of a larger narrative, shaped by context and designed to be felt as much as it is tasted.
